Meatball Subs


Meatball subs are a fast and fun meal.  You can go the easy route, which I will post here, or you can make your own meatballs and sauce and it'll take a little longer, but I'm sure taste better.  I'll update this post when I find the best meatball and sauce recipe.  Until then, I'll post the easy version.  My friend Mina Kendig made this for my family and we've been hooked ever since.  I use to work at a pizza and sub shop in high school called Papa Kelseys and made meatball subs there, I had never thought to make them at home!  

Directions:
  • Preheat oven to 375 degrees
  • Put 1 small bag of frozen turkey meatballs (about 24 meatballs) into a sauce pan and cover with your favorite spaghetti sauce.  I use Bertolli tomato and basil spaghetti sauce from Costco.  I also buy my turkey meatballs from Costco.
  • Simmer (on medium heat) on stovetop until meatballs are cooked and heated thoroughly. (about 15 min)
  • Cut 6 hoagie rolls in half length wise
  • Brush olive oil or butter onto the insides of the rolls
  • Sprinkle with garlic powder or garlic salt
  • Brown rolls in oven on broil.  Watch them so they don't burn, it shouldn't take long.  You can put them on the top rack to speed it up.
  • Spread a little sauce on each hoagie roll and place 3-4 meatballs inside.
  • Sprinkle shredded mozzarella cheese down the center on both sides.
  • Put  the subs back in oven, on broil, until cheese is melted.  
  • Serve with fresh basil or parsley sprinkled on top.  You can also add sliced banana peppers for an extra kick!
I like to serve these with fresh fruit and veggies with dip.  If you make extra sauce and meatballs, you can serve it over spaghetti the next day. ;)
