Lemon Parmesan Broccoli
This recipe is another delicious way to get your greens in! Broccoli is one of our family's favorite vegetables. This a fancier version that I like to use when we have guests over. I got it from my friend Kylee. Everything she makes is gourmet and delicious. Usually, I just sear steamed broccoli in a pan with olive oil, salt and pepper. I'm lazy, like that, but this version doesn't take that much longer and it is perfection!
Ingredients:
12 ounces Broccoli Florets (florets are the best, don't buy the chopped broccoli, yuck!)
2 Tbs. extra virgin olive oil
2 garlic cloves (or 2 tsp. minced garlic)
1/2 tsp grated lemon rind
1 tsp. fresh lemon juice
1/4 tsp. kosher salt
3 Tbs. shaved fresh parmesan cheese
Directions
1. Arrange broccoli in a steamer and steam covered for 4 min, until tender crisp. I just get the frozen broccoli florets that you can steam in a bag in the microwave and steam it that way.
2. Heat a cast iron pan over medium high heat. Add oil and garlic and cook 2 min or until garlic is fragrant. Add oil, rind, lemon juice and salt to broccoli and toss to coat. Fry broccoli in pan until edges of broccoli start to brown.
3. Remove from heat, sprinkle with salt and pepper and parmesan cheese and serve.
