Enchilada's with Green sauce

Enchiladas! We love enchiladas!  We love all Mexican food, who are we kidding.  Enchiladas can be super special and take a lot of time as you make each ingredient and sauce, or like the ones below, they can be an easy and a yummy way to use up your taco leftovers.  My kids still think they're special, so more often than not, I make this version.   Ingredients: Crockpot Mexican chicken,  Carnitas pork, or Ground Beef taco meat Medium sized flour shell or small flour or corn tortilla shells 1 can refried beans or black beans (drained and rinsed) 1 can corn (drained and rinsed) Grated Sharp Cheddar 1 large can of Enchilada sauce, I like Green Chile Enchilada Sauce.  I like the flavor of the green tomatillo. Dad's Swedish Pancakes This Swedish pancake recipe comes from Grandma Ferrel (Laurel), who learned it from her mother (Elva) who was Swedish.  Elva's family left Sweden and she came to the United States in her mothers belly and was born in Salt Lake City, UT.   Her name Elva, means 11 in Swedish, because she was the 11th child.  My children love daddy's Swedish pancakes and I love to watch them enjoy a little bit of his family heritage.   Swedish Pancakes 3 eggs 2 cups milk 1 cup flour First, put the flour in the bowl.  Fluff flour with the whisk.  Then add the milk and mix the flour and milk with the whisk.  Then add the eggs and mix with the whisk.  Add cinnamon, nutmeg and vanilla to taste if desired.  Use a good quality nonstick pan and smooth surface, put non-stick spray if needed.  Place the pan on the stove top at medium heat.  Pour pancake batter until the batter goes to the edges of the pan.  Cook until the t...

Caprese Sandwiches (aka Tomato, Pesto Mozzarella Sandwhiches)

These sandwiches are my oldest daughter's favorite meal.  I first had them when my friend Kylee made them for a church activity.  I was pregnant at the time and could not stop thinking about them after I left the event.  I had to call and ask for her recipe.  I also happened to have a tomato plant that was doing well and a lot of fresh tomatoes to eat.  These sandwiches wound up being my pregnancy craving for my last child.  These sandwiches AND Chewy Jolly Rancher Sours candy lol.  A woman can crave more than one thing right lol. Pork Carnitas Tacos with Mexican Slaw These delicious and easy tacos are a family favorite.  The best thing about tacos is you can make all of the toppings, set them out and people can assemble their tacos exactly how they like them.  Everyone is always happy with this meal.  Pork Carnita Meat You can buy Pork Carnita meat at Costco or Frys.  Make according to the package.  Or, you can make your own.  This recipie is delicious.   Pork Carnita meat by Lillie Eats and Tells Corn Tortillas Put someone in charge of frying the corn tortillas.  Spray some cooking spray in the pan and ightly fry the corn tortillas on each side in a non-stick pan.   Mexican Slaw While those are fying make the cabbage mix.  Put one package of coleslaw in bowl.  Chop up one bunch of cilantro, add it to the coleslaw.  Squeeze the juice of one lime onto the coleslaw.  Add a drizzle of olive oil and sprinkle with ground black pepper and groun...

Crockpot Ribs To me, ribs always seemed like a hard food to make.  I've heard of people slaving over their grills for hours.  I was not interested, I don't have the time or patience for that.  But my friend Heather Palmer made some amazing ribs and shared her secret with me and my family and I will forever be grateful.  These ribs wow a crowd!  I've made them for Christmas Eve dinner, formal dance dates, family get-togethers and Sunday dinners.  Everyone who has eaten my ribs rave about them.   Which is funny to me because they are one of my easiest meals.  Really.  First you need to buy your ribs.  Don't get anything but pork baby back ribs.  They have smaller bones and more meat and are delicious period.   Second, buy them from Costco.   Notice the price?  You get 3 racks of ribs for approx. $30.  I usually buy them and keep them in my freezer until a party or special event.  I take them out...

Rosemary Focaccia Bread

My family's favorite bread recipe!  It is so delicious, when it is cooking, the smell spreads through the house calling everyone to the kitchen.  The best part is that it's super easy to make!  That is why I put it in this blog.  Only favorite recipes are allowed in this blog, and part of being a favorite is that it isn't so painful to make again and again.  My friend Mina gave me this recipe and made it with me to show me how it's done.  I will forever be grateful for her.  She is an amazing cook and friend.   Rosemary Focaccia Bread First, Grab a large mixing bowl.  Then turn your tap on to the hottest setting and let the water get as hot it can.  Put 2 cups of hot tap water into the bowl.   Dissolve 2 Tbs. of honey into the warm water.   Add 1 Tbs. of yeast and stir it into the water/honey mixture.  Set it aside.  If you're really interested in watching the yeast grow, you can stare at it, 'cause I'm...

Chinese Chicken Salad

This salad has become a family favorite.  In fact, it is one of the only salads that my Littles will eat.  I have gotten many compliments from this salad when I bring it to luncheons or serve it to family or friends.  It has some surprising ingredients.  The first time I made the salad, I thought it was odd that it used crunched up Ramen Noodles on top and I didn't know what to do with the seasoning packets.  Instead of throwing them away, I put the packets in to the dressing and voila!  Flavor galore!  If you are anti-Ramen, or a purist, you may find that offensive.  But I like to live on the edge of whole foods and junk foods, so we combined them both in this delicious salad, ha!  Seriously though, I think a lot about feeding my family nutritious foods and I love that they will eat this salad and have dubbed it one of their favorite foods.  Maybe it will become a gateway drug to more salads in their future...
