Caprese Sandwiches (aka Tomato, Pesto Mozzarella Sandwhiches)

These sandwiches are my oldest daughter's favorite meal.  I first had them when my friend Kylee made them for a church activity.  I was pregnant at the time and could not stop thinking about them after I left the event.  I had to call and ask for her recipe.  I also happened to have a tomato plant that was doing well and a lot of fresh tomatoes to eat.  These sandwiches wound up being my pregnancy craving for my last child.  These sandwiches AND Chewy Jolly Rancher Sours candy lol.  A woman can crave more than one thing right lol.

Caprese Sandwiches

Ingredients:

Ciabatta Rolls

Pesto

Tomatoes

Fresh Mozzarella

Garlic Clove


Instructions:

Turn oven to broil

Cut each ciabatta roll in half

Lightly brush each half with olive oil

Put in the oven (top shelf) until they are browned.  Watch, because it happens fast.  

Take them out of the oven and rub a peeled garlic clove on to the browned side of each roll. It goes on like butter and sort of melts on to them as you rub it across. (You can also sprinkle the bread with garlic powder before putting it under the broiler)

Now spread pesto sauce onto each half.  Use your favorite brand or make you own.  I prefer fresh.

Place 1 slice of fresh mozzarella on one half and a slice of tomato on the other half.  I put 1.5 slices of mozzarella and 1.5 slices of tomatoes because I want to cover the entire half.

Sprinkle salt and pepper onto the tomato (extra yum factor)

You can now add arugula to one side if you like.  I am a fan or arugula! 

Put the two halves together and slice on the diagonal.
