Pork Carnitas Tacos with Mexican Slaw


These delicious and easy tacos are a family favorite.  The best thing about tacos is you can make all of the toppings, set them out and people can assemble their tacos exactly how they like them.  Everyone is always happy with this meal. 

Pork Carnita Meat

You can buy Pork Carnita meat at Costco or Frys. Kroger Seasoned Pork Carnitas



Make according to the package.  Or, you can make your own.  This recipie is delicious.

Corn Tortillas

Put someone in charge of frying the corn tortillas.  Spray some cooking spray in the pan and ightly fry the corn tortillas on each side in a non-stick pan.  

Mexican Slaw

While those are fying make the cabbage mix.  Put one package of coleslaw in bowl.  Chop up one bunch of cilantro, add it to the coleslaw.  Squeeze the juice of one lime onto the coleslaw.  Add a drizzle of olive oil and sprinkle with ground black pepper and ground salt.  Toss and set aside

Home Made Guacamole

Store bought guacamole is not the same.  Don't skip this step if you can.  Take 2-4 ripe avacados.  You'll know if they are ready to eat if you squeeze them and they give a little.  If they're too hard don't eat them yet.  Wait a few days.  Cut each avacado in half and take the pit out.  Slice the avacdo into a krisscross pattern and spoon the chunks of avacado out into a bowl.  Roll one lime between your palm and the countertop adding a little pressure.  This get the lime juice ready to come out.  Cut it in half and squeeze the juice onto the avacado.  Sprinkle with salt and pepper.  Add some chopped cilantro.  Now lightly smash it with a fork so it is blended but not pureed.  It needs to be a little chunky. 

Chopped onions

Dice an onion into small chunks and put in a small dish as a topping

Beans

My children love either refried beans or black beans to use on top as well.  I just used canned ones andd warm them up in the microwave.  I drain and rinse the black beans which makes them less salty.  

Cheese

My children like to add sharp cheddar to their tacos.  We buy the Tilamook aged sharp cheddar (white).  You can also add Cojita cheese.  I prefer mine without any cheese so I can enjoy the mix of other flavors.  

Chips and guacamole/ salsa or fruit make a great side dish for this meal.
