Gerald's Omelets

 Gerald's Omelets I got this recipe from some dear friends, the Fowkes.  They came to stay with us and I confided that I was not good at making omelets. So, being the kind friend and good cook that he is,  Gerald,  taught me how to make delicious omelets!  These are French omelets, and I really like how soft and delicious they are.  And I love to think of our friends every time I make them.  Getting recipes from people you care about is a wonderful way to remember shared meals and conversations and to keep memories alive even when you live far away or they have passed away.  It's like a delicious way do personal and family history!    Ingredients: 2 eggs per omelet Meat (ham, sausage, or bacon) Cook ahead of time so they are ready to add to the omelet. Grilled veggies (peppers, onion)  I cut them into small pieces and grill them ahead of time Cheese (Sharp cheddar, pepper jack, feta.  Any cheese you like) Fresh veggies (spinach...

Hawaiian Slaw

 Hawaiian Slaw Salad 2 C. Coleslaw salad mix 1 C. Shredded carrots 1 C. Fresh pineapple, cut into bite sized pieces 3 green onions thinly sliced at a diagonal Dressing 1 Tbsp. fresh grated ginger 3 Tbsp. Rice Wine Vinegar 1 Tbsp. Sesame Oil 1 Tbsp. Soy Sauce 1/2 Lime Juiced 1 tsp. Black Sesame Seeds Mix ingredients in a quart jar by shaking vigorously.  Pour over salad and toss. This coleslaw is light and has great flavor.  It's delicious with pork or chicken or inside of a pulled pork sandwich!  It definitely adds an Asian flair to any dish!

Hawaiian Grilled Pork from Carlsbad Cravings

 Hawaiian Grilled Pork  Ingredients 2 pork loins (trimmed.  Cut off silver skin and fat) Marinade: 1/2 C Pineapple Juice (canned not fresh) 1/3 C Olive Oil 1/3 C Packed Brown Sugar 1/4 C Soy Sauce (low sodium)  1/4 C ketchup 1 Tbs. Asian Sweet Chili Sauce 1 tsp. Each of Ground ginger, onion powder, garlic powder 1//2 tsp each paprika, salt, pepper Place pork loins in the marinade (reserve 1/3 C. to put on meat after it is cooked) Marinade pork for 4-12 hours.  Easy to do in the morning and just grill in the evening. Directions: Heat grill.   Heat the grill so it is 400 degrees F with the lid closed.  Don’t add the pork tenderloin until the grill reaches temperature or it won’t sear as beautifully. Clean grill.  Once the grill is fully heated, clean it thoroughly with a wire grill brush.  A clean grill ensures direct contact with the heat to create a beautiful sear and grill marks and also helps prevent sticking.  Grease grill ....

Kalua Pork

 Kalua Pork Ingredients: 7   lb   bone in pork butt   or shoulder 1 Tbsp liquid smoke 1 tbsp kosher salt ▢ Directions: Place pork roast fat side up in your slow cooker.  Rub all over with Liquid Smoke and salt.  Cook on low for 9-10 hours.  Shred meat in the slow cooker so the meat can sit in the juice until it is served.   Serve hot. This is an easy meat to make, it just needs time to cook.  Throw it in in the morning and it'll be ready for dinner.  Serve with Coconut Rice, Hawaiian slaw and Hawaiian rolls. You can make shave ice or Dole Whip for dessert!  We bought a Little Snowie shave ice machine and it is seriously the best!  The flavors you can purchase through Little Snowie are delicious and easy to store and make. Pineapple Dole Whip

 Pineapple Dole Whip Ingredients: Frozen Pineapple Canned Pineapple Juice Vanilla Ice Cream Directions: Fill a blender 1/2 Full of frozen pineapple.  Fill the top half with vanilla ice cream.   Pour canned pineapple juice into blender until it is half full.  Blend ingredients together.   You can make the consistency more firm by adding more pineapple or vanilla ice cream.  You can make it more liquidy by adding more pineapple juice.  If you want to get fancy, you can put the Dole Whip into a frosting bag and pipe it into a cup to make it look like it came out of a machine.  I have fun cups and drink umbrellas that I bought from Amazon that make this dessert feel like a tropical getaway!  It's definitely an easy way to make this dessert festive!  Everyone I have made this for loves it!  It is so refreshing on a hot day and so easy to make.  You really can't go wrong.  The best part is, you can keep frozen pineappl...

Hawaiian Meal

Lemon Parmesan Broccoli

  Lemon Parmesan Broccoli This recipe is another delicious way to get your greens in!  Broccoli is one of our family's favorite vegetables.  This a fancier version that I like to use when we have guests over.  I got it from my friend Kylee.  Everything she makes is gourmet and delicious. Usually, I just sear steamed broccoli in a pan with olive oil, salt and pepper.  I'm lazy, like that, but this version doesn't take that much longer and it is perfection!  Ingredients: 12 ounces Broccoli Florets (florets are the best, don't buy the chopped broccoli, yuck!) 2 Tbs. extra virgin olive oil 2 garlic cloves (or 2 tsp. minced garlic) 1/2 tsp grated lemon rind 1 tsp. fresh lemon juice 1/4 tsp. kosher salt 3 Tbs. shaved fresh parmesan cheese Directions 1.  Arrange broccoli in a steamer and steam covered for 4 min, until tender crisp.  I just get the frozen broccoli florets that you can steam in a bag in the microwave and steam it that way. 2.  He...

Meatball Subs

Meatball Subs Meatball subs are a fast and fun meal.  You can go the easy route, which I will post here, or you can make your own meatballs and sauce and it'll take a little longer, but I'm sure taste better.  I'll update this post when I find the best meatball and sauce recipe.  Until then, I'll post the easy version.  My friend Mina Kendig made this for my family and we've been hooked ever since.  I use to work at a pizza and sub shop in high school called Papa Kelseys and made meatball subs there, I had never thought to make them at home!   Directions: Preheat oven to 375 degrees Put 1 small bag of frozen turkey meatballs (about 24 meatballs) into a sauce pan and cover with your favorite spaghetti sauce.  I use Bertolli tomato and basil spaghetti sauce from Costco.  I also buy my turkey meatballs from Costco. Roasted Vegetables

 Roasted Vegetables The best way to make vegetables is to roast or fry them.  Not only does it unlock fat soluble vitamins when you add a little olive oil to them, but it also makes them actually taste good!  Some of our favorite vegetables to roast are brussels sprouts, green beans, baby red potatoes, carrots and asparagus.   Directions: Preheat oven to 400 degrees Wash vegetables.  Cut them into uniform bite sized pieces, trimming off any bruised or old parts as well as stems or hard parts. Put vegetables in a bowl and drizzle some olive oil over them and toss to coat.  This can be as much or as little as you want.  I like to lightly coat the vegetables with the olive oil. Arrange the vegetables on a rimmed baking sheet so they do not overlap or touch each other.   Sprinkle vegetables with salt and pepper.   I like to add fresh or dried rosemary to the potatoes.  I also like to drizzle balsamic reduction over the brussel...

Grilled Pork Tenderloin

  Grilled Pork Tenderloin This is the best pork tenderloin !  The rub, the texture, everything.  I got this recipe from Carlsbadcravings.com and whenever I make it for people, they ask for the recipe or request it next time we are together.  Do not skip steps and read the entire blog post first before making it.  It's not difficult, but you want to know what you're doing first.  You must use a meat thermometer or you will risk overcooking the pork, which will result in a dry texture instead of a buttery soft texture.   I have made this pork tenderloin with many sides.  One of the favorite is my mango quinoa salad which can be made ahead of time and stored in the fridge and Hawaiian rolls from the store.  This leaves dinner time prep to focusing on this meat and trust me, you'll be glad you did.  This recipe calls for 2 pork loins which come in 1 package at Costco.  I double it for my family of 5 so we have some delicious prot...

 Grandma Ferrel's Baked Lemon Pepper and Dill Salmon Recipe 1 salmon filet from Costco (I rinse it off with cold water)  You can also cut the salmon into smaller filets and put them on the pan.   I usually don't, less work! Ha! Place salmon filet on a foil lined cookie sheet. (the foil helps with clean up) Pro tip, pick one cookie sheet for cooking salmon.  I make lemon bars on the same cookie sheet once and they tasted like fish! lol Sprinkle the salmon filet generously with lemon pepper Sprinkle the salmon filet generously with dill Optional:  add a couple of chunks of butter to the top of the salmon for extra flavor and softness, but not necessary.  I like to do this on special occasions, or if the salmon is "wild caught" and less fatty. Bake at 400 degrees Cook them for 10 min per inch of thickness.  It is better to undercook a salmon than to over cook it, so check for doneness after 10 minutes.  You will know the salmon is done when the ...

GG's Caramel Corn

 GG's Caramel Corn 6-8 quarts of popped corn Cook: 1 pkg of brown sugar 2 cubes of butter 1 tsp. salt 1/2 C. Karo Syrup (dark of white) Boil to soft ball stage, don't boil too long.  About 5 Min. Remove pan from stove. Add: 1/2 tsp. baking soda 1 tsp. Vanilla Stir Pour mixture over popped corn and mix Bake for approx. 1 hour at 250 degrees. Stir occasionally.  Caramel corn will be done with it is dry and crisp. GG always talked about her 5 food groups.  Candy, Caramel Corn, Cookies, Cake and Pie.  So it's only fitting that I post her Caramel Corn recipe.  She always spread so much happiness and joy when she was in the room and always talked about her 5 food groups with a sparkle in her eye.  She lived to be 3 weeks shy of 102, so I guess that's one way to say this caramel corn won't kill you! lol! 

Grandma Brown's Carmel Corn

 Grandma Brown's Caramel Corn Pop a very large bowl of popcorn, or 2 medium bowls.  I prefer air popped popcorn without butter added.  Separate the un-popped kernels from the popped popcorn by pouring the newly popped popcorn into a bowl and then shaking the popcorn to make the kernels fall to the bottom and then scooping the popcorn into another bowl with your hands.  Trust me, this will save you from inadvertently biting into a hard kernel and breaking a tooth!  Make the Caramel: 1 C. Sugar 1 C. White Karo syrup Heat in pan until sugar is melted Add: 1 C. Peanut Butter (I prefer smooth, but it can be crunchy peanut butter) Heat and stir until bubbly. Add: 1 tsp. vanilla 1 dash of salt Stir Pour mixture onto a large bowl of popcorn and fold it in until the popcorn is coated.  Can add chocolate chips, M&Ms as well.  Popcorn will be chewy, sticky and soft.  If you wait to eat it, the popcorn mixture will harden and not taste as good, in my opin...
