Enchilada's with Green sauce

Enchiladas! We love enchiladas!  We love all Mexican food, who are we kidding.  Enchiladas can be super special and take a lot of time as you make each ingredient and sauce, or like the ones below, they can be an easy and a yummy way to use up your taco leftovers.  My kids still think they're special, so more often than not, I make this version.   Ingredients: Crockpot Mexican chicken,  Carnitas pork, or Ground Beef taco meat Medium sized flour shell or small flour or corn tortilla shells 1 can refried beans or black beans (drained and rinsed) 1 can corn (drained and rinsed) Grated Sharp Cheddar 1 large can of Enchilada sauce, I like Green Chile Enchilada Sauce.  I like the flavor of the green tomatillo. Dad's Swedish Pancakes

Dad's Swedish Pancakes This Swedish pancake recipe comes from Grandma Ferrel (Laurel), who learned it from her mother (Elva) who was Swedish.  Elva's family left Sweden and she came to the United States in her mothers belly and was born in Salt Lake City, UT.   Her name Elva, means 11 in Swedish, because she was the 11th child.  My children love daddy's Swedish pancakes and I love to watch them enjoy a little bit of his family heritage.   Swedish Pancakes 3 eggs 2 cups milk 1 cup flour First, put the flour in the bowl.  Fluff flour with the whisk.  Then add the milk and mix the flour and milk with the whisk.  Then add the eggs and mix with the whisk.  Add cinnamon, nutmeg and vanilla to taste if desired.  Use a good quality nonstick pan and smooth surface, put non-stick spray if needed.  Place the pan on the stove top at medium heat.  Pour pancake batter until the batter goes to the edges of the pan.  Cook until the t...

Caprese Sandwiches (aka Tomato, Pesto Mozzarella Sandwhiches)

These sandwiches are my oldest daughter's favorite meal.  I first had them when my friend Kylee made them for a church activity.  I was pregnant at the time and could not stop thinking about them after I left the event.  I had to call and ask for her recipe.  I also happened to have a tomato plant that was doing well and a lot of fresh tomatoes to eat.  These sandwiches wound up being my pregnancy craving for my last child.  These sandwiches AND Chewy Jolly Rancher Sours candy lol.  A woman can crave more than one thing right lol.
