 Grandma Ferrel's Baked Lemon Pepper and Dill Salmon



Recipe
  • 1 salmon filet from Costco (I rinse it off with cold water)  You can also cut the salmon into smaller filets and put them on the pan.   I usually don't, less work! Ha!
  • Place salmon filet on a foil lined cookie sheet. (the foil helps with clean up) Pro tip, pick one cookie sheet for cooking salmon.  I make lemon bars on the same cookie sheet once and they tasted like fish! lol
  • Sprinkle the salmon filet generously with lemon pepper
  • Sprinkle the salmon filet generously with dill
  • Optional:  add a couple of chunks of butter to the top of the salmon for extra flavor and softness, but not necessary.  I like to do this on special occasions, or if the salmon is "wild caught" and less fatty.
  • Bake at 400 degrees
  • Cook them for 10 min per inch of thickness.  It is better to undercook a salmon than to over cook it, so check for doneness after 10 minutes.  You will know the salmon is done when the meat forks apart easily.  Check the thickest part.  Overcooked salmon is dry and chewy.  The salmon should be soft, moist and delicious!

Serve with mashed potatoes or bakes potatoes and grilled green beans.  It is also delicious over a salad, or with Cesar salad.  Pesto pasta and fettuccini alfredo are also delicious with this salmon.  Lately I've been using leftovers to make salmon tacos and they are also a hit!  
This salmon has become a staple in my meal planning.  It's so easy to cook, and healthy, delivering protein and omega 3's.  Omega-3 fatty acids are linked the heart health, brain function, and reduced inflammation, need I say more! 


This is a family favorite recipe from Mom Ferrel.  I had only had salmon a few times growing up.  I'm so grateful for my mother-in-law and the many things that she taught  me over the years, including some of her amazing recipes.  David's favorite food growing up was salmon.  When his parents took him to a restaurant as a child, he looked at the server and said, "I will take the salmon."  The server replied with, "And I suppose you would like a Heineken to go with that?" Lol!  One of my favorite foods was French fries with fry sauce.  I am an Idaho girl.  Now guess what our youngest child's favorite foods are?  Salmon and French fries!  Is it in our DNA?  Lol, I guess she's a good mix of David and I, ha!
