Pot Roast

  Pot Roast


1.  Melt enough fat to coat pan. (Olive oil or butter)
2.  Brown roast in pan (Use a round roast or chuck roast.  Sprinkle it with salt and pepper and some seasoning salt as you brown each side.  The chuck roast has great flavor, but more fat.)  You can skip browning the roast if you need to.
3.  Place a slice up onion on the bottom of the crock pot
4.  Place the roast on the onion
5.  Sprinkle 1 packet of Lipton Onion Soup Mix over the roast.
6.  Cut up carrots and potatoes and put them in the crockpot around the roast and on top.  Sometimes I wrap the potatoes in foil and cover the roast and carrots with foil and then put the foil wrapped potatoes on top so I have baked potatoes at the end instead of pot roast potatoes.  
7.  Sprinkle another packet of Lipton Onion Soup Mix over the carrots and potatoes
8.  Sprinkle salt and pepper over roast, carrots and potatoes.
9.  Cover with foil and place the lid on the crockpot.  The foil creates a good seal.
10.  Cook for 6 hours on high or 6-8 hours on low.  The time to cook depends on if the roast was frozen or thawed and how big it is.  Check the the roast by slicing into it.  If the meat does not fall apart and feel soft and easy to cut, then it needs to cook longer.  You can always keep a roast warm on the warm setting of the crockpot, so it's better to leave more time to cook it than not leave enough time and have a tough roast.  Bottom line, if your roast is tough, keep cooking it!

Eat from the crockpot, or display on a platter with a side salad.  Garnish with parsley.  If you do the baked potato option, set out baked potato toppings.  Shredded cheese, sour cream, bacon crumbles, sliced green onions, and butter.  

We like to make this as a Sunday meal or on a busy day, as it cooks by itself and it's pretty easy to make.

Mom Ferrel's Recipe

1.  Melt enough fat to coat the pan

2.  Brown the roast on stove

3.  Put a little bit of water in the pan until 3/8" of water is in the pan.

4.  Put the lid on and simmer for a couple of hours (2 hours). 

5. Add water if necessary.  Check to make sure the water has not evaporated.

6.  add vegetables 

Mom Ferrel's Foil Method

1.  Put roast on foil.

2.  Put Lipton Onion Soup Mix on roast and wrap it up.

3.  Bake in preheated oven at 450 degrees for 2-3 hours

4.  Add more Lipton Onion Soup Mix and vegetables

5.  Seal and cook for one more hour.
