Kalua Pork
Making a dinner that is centered around a theme is so fun and adds some flair into dinner time! Hawaiian themed meals can be done in the summer or winter and they are always delicious and fun! Throw on some chill music (Jack Johnson, Beach boys, Moana) and have fun making these delicious Hawaiian foods. Have your children join you and watch Moana afterwards! Bonus if you wear leighs and Hawaiian shirts or skirts!

Hawaiian Slaw
Cilantro Lime Coconut Rice

Hawaiian Rolls
Pineapple Dole Whip (bonus if you have fun straws with umbrellas!)
Ingredients:
- 7 lb bone in pork butt or shoulder
- 1 Tbsp liquid smoke
- 1 tbsp kosher salt
Directions:
- Place pork roast fat side up in your slow cooker.
- Rub all over with Liquid Smoke and salt.
- Cook on low for 9-10 hours.
- Shred meat in the slow cooker so the meat can sit in the juice until it is served.
- Serve hot.
Ingredients
2 pork loins (trimmed. Cut off silver skin and fat)
Marinade:
1/2 C Pineapple Juice (canned not fresh)
1/3 C Olive Oil
1/3 C Packed Brown Sugar
1/4 C Soy Sauce (low sodium)
1/4 C ketchup
1 Tbs. Asian Sweet Chili Sauce
1 tsp. Each of Ground ginger, onion powder, garlic powder
1//2 tsp each paprika, salt, pepper
Place pork loins in the marinade (reserve 1/3 C. to put on meat after it is cooked)
Marinade pork for 4-12 hours. Easy to do in the morning and just grill in the evening.
Directions:
- Heat grill. Heat the grill so it is 400 degrees F with the lid closed. Don’t add the pork tenderloin until the grill reaches temperature or it won’t sear as beautifully.
- Clean grill. Once the grill is fully heated, clean it thoroughly with a wire grill brush. A clean grill ensures direct contact with the heat to create a beautiful sear and grill marks and also helps prevent sticking.
- Grease grill. Generously grease the CLEAN grill by making a wad of paper towels, drenching them in vegetable oil, then use tongs to rub them along the grill grates. NEVER spray a firing grill with cooking spray.
- Grill pork tenderloin. Let the marinade drip off of the pork (but do not rub off), then add the tenderloins to the hot grill and cover. Grill for 3-5 minutes per all 4 sides or until a meat thermometer registers 145-degrees F when inserted into the thickest part of the tenderloin.
Hawaiian Slaw
Salad
2 C. Coleslaw salad mix
1 C. Shredded carrots
1 C. Fresh pineapple, cut into bite sized pieces
3 green onions thinly sliced at a diagonal
Dressing
1 Tbsp. fresh grated ginger
3 Tbsp. Rice Wine Vinegar
1 Tbsp. Sesame Oil
1 Tbsp. Soy Sauce
1/2 Lime Juiced
1 tsp. Black Sesame Seeds
Mix ingredients in a quart jar by shaking vigorously. Pour over salad and toss.
Cilantro Lime Coconut Rice
Ingredients
2 C. White Jasmine Rice (cooked)
1 Can coconut milk
2 C. Water
1 tsp. Kosher Salt
Splash rice wine vinegar
1 Tbs. White Sugar
Chopped Green Onion
Chopped Cilantro
Black Pepper
1-2 limes juiced
Instructions
- Combine rice, water, coconut milk, juice of 1 lime and salt in a large pot.
- Put the lid on tight and bring to a boil. Once boiling, reduce heat to a simmer and cook for about 20 minutes.
- Fluff rice with a fork and add chopped up cilantro and juice from the other lime.
- Taste and add more salt if necessary
Pineapple Dole Whip
Ingredients:
Frozen Pineapple
Canned Pineapple Juice
Vanilla Ice Cream
Directions:
Fill a blender 1/2 Full of frozen pineapple.
Fill the top half with vanilla ice cream.
Pour canned pineapple juice into blender until it is half full.
Blend ingredients together. You can make the consistency more firm by adding more pineapple or vanilla ice cream. You can make it more liquid by adding more pineapple juice.
