 Grandma Brown's Caramel Corn




Pop a very large bowl of popcorn, or 2 medium bowls.  I prefer air popped popcorn without butter added.  Separate the un-popped kernels from the popped popcorn by pouring the newly popped popcorn into a bowl and then shaking the popcorn to make the kernels fall to the bottom and then scooping the popcorn into another bowl with your hands.  Trust me, this will save you from inadvertently biting into a hard kernel and breaking a tooth! 


Make the Caramel:

1 C. Sugar

1 C. White Karo syrup

Heat in pan until sugar is melted


Add:

1 C. Peanut Butter (I prefer smooth, but it can be crunchy peanut butter)

Heat and stir until bubbly.


Add:

1 tsp. vanilla

1 dash of salt

Stir

Pour mixture onto a large bowl of popcorn and fold it in until the popcorn is coated.  Can add chocolate chips, M&Ms as well.  Popcorn will be chewy, sticky and soft.  If you wait to eat it, the popcorn mixture will harden and not taste as good, in my opinion.

My dad loves popcorn.  I remember him eating a big bowl of butter popcorn every night as he watched TV when I was growing up.  My mom would make this special popcorn on movie nights and we all loved it!
