Hard Rock Cafe Baked Potato Soup Copycat
When an Idaho girl tells you that Hard Rock Cafe Baked Potato Soup Copycat is the best potato soup, you believe her. You can make the ingredients ahead of time and throw the recipe together from start to finish in less than 20 minutes. Nothing beats a warm, hearty soup in a bread bowl when the temperature drops and you want to Hygge. Hygge is a new Danish word I learned a few years ago and can't stop obsessing over. It's basically "cozy", think blankets, candlelight, warm fires, hot drinks. This soup warms you up from the inside out and makes your cooler evenings cozier.
Ingredients
1 yellow onion, diced
2/3 cup flour
6 cups chicken stock
4-6 tsp. Korr chicken bouillon
4 cups diced, baked potatoes. 2-4 potatoes (I leave the peels on. You can peel them if you want)
1/4 cup chopped fresh parsley (or 4 tsp. dried parsley)
3 tsp minced garlic
1 1/2 teaspoon dried basil
1 1/2 teaspoon salt
1 1/2 teaspoons coarse black pepper
2 cups heavy cream
Instructions
Cook 1 package of bacon in the oven on a cookie sheet. I line the cookie sheet with tinfoil or parchment paper before placing the bacon on it for easy clean up. Bake the bacon at 400 degrees for 10-15 min. Once crispy, take it out of the oven, and place the bacon on a plate lined with paper towels. (Sometimes I use the precooked bacon from Costco, and just use olive oil instead of bacon grease.) Pour some bacon grease into a stock pot. Add the onion to the pot and cook on medium. When the onion is translucent, add 3 tsp minced garlic and stir until fragrant. Add 2/3 cup of flour and stir. Slowly add 6 cups of chicken stock to the pot while stirring. I use bone broth for extra nutrients. I also add 4-6 tsp of Korr chicken bouillon for flavor. Add diced baked potatoes and the rest of the spices, and bring to a boil. Once it starts to boil, take it off the stove, stir in the cream and cheese, and you are ready to eat! (You don't want the cream to boil)

Grated Sharp Cheddar cheese
Diced green onions,
Additional chopped bacon
Chopped fresh parsley
If you want to make this dinner special, buy some bread bowls from a local bakery and use those instead of bowls.
