Easy Arugula Salad
I threw this salad together one night, and my family ate the whole thing! It was the perfect pair to the filet mignon I had made. I also paired it with grilled pork tenderloin, and it was perfection. I would say this salad is not the star of the show, but it is a healthy and delicious sidekick. You can add nuts and cheese, and fruit to this salad, but we enjoyed it like this.
Ingredients
1 small box of arugula
Olive oil
Lemon juice
Salt and pepper to taste
Instructions
Put the arugula leaves in your salad bowl.
Drizzle with olive oil. I didn't measure, but I would say I drizzled about 2-3 tbs.
Juice 1/2 of a lemon onto the leaves.
Massage olive oil and lemon juice into the salad leaves with your hands. The leaves will get a little wilted.
Sprinkle with sea salt and pepper and toss to serve.
