Hard Rock Cafe Baked Potato Soup Copycat

When an Idaho girl tells you that Hard Rock Cafe Baked Potato Soup Copycat is the best potato soup, you believe her. You can make the ingredients ahead of time and throw the recipe together from start to finish in less than 20 minutes.  Nothing beats a warm, hearty soup in a bread bowl when the temperature drops and you want to Hygge.  Hygge is a new Danish word I learned a few years ago and can't stop obsessing over.   It's basically "cozy", think blankets, candlelight, warm fires, hot drinks.  This soup warms you up from the inside out and makes your cooler evenings cozier. Ingredients 1 package of bacon 1 yellow onion, diced 2/3 cup flour 6 cups chicken stock 4-6 tsp. Korr chicken bouillon 4 cups diced, baked potatoes.  2-4 potatoes (I leave the peels on.  You can peel them if you want) 1/4 cup chopped fresh parsley (or 4 tsp. dried parsley) 3 tsp minced garlic 1 1/2 teaspoon dried basil 1 1/2 teaspoon salt 1 1/2 teaspoons coarse black pepper 2 cups...

Easy Arugula Salad

I threw this salad together one night, and my family ate the whole thing!  It was the perfect pair to the filet mignon I had made.  I also paired it with grilled pork tenderloin, and it was perfection.  I would say this salad is not the star of the show, but it is a healthy and delicious sidekick.  You can add nuts and cheese, and fruit to this salad, but we enjoyed it like this. Ingredients 1 small box of arugula  Olive oil Lemon juice Salt and pepper to taste Instructions Put the arugula leaves in your salad bowl. Drizzle with olive oil.  I didn't measure, but I would say I drizzled about 2-3 tbs.   Juice 1/2 of a lemon onto the leaves. Massage olive oil and lemon juice into the salad leaves with your hands.  The leaves will get a little wilted. Sprinkle with sea salt and pepper and toss to serve.   Serve with your favorite meat!  This porkloin recipe from Carlsbad Cravings is perfection, and my arugula salad tastes delicious...
